Ode to Spinach

I love spinach.  It has such a mild flavor (unless you are eating it from a can which is NEVER recommended!). I'm talking fresh or even frozen. You can add it to pasta, soup, sandwiches, or even breakfast to get an additional serving of veggies.  It's an excellent source of vitamin C if eaten raw, as well as vitamins A&B, calcium, potassium, and iron.  Go ahead, mix it with your eggs, add a little feta and some cracked pepper and enjoy!

  1. Yummy! I love spinach too. I will just eat hand fulls of it raw out of the fridge (and imagine it making my muscles grow while doing so).

    1. Yes! I try to eat it in place of chips, you know...it provides the crunchy in my life:)

  2. i got a little overzealous with buying a costco sized bag of spinach last week. i need to have 18 spinach feasts with all my friends so i don't waste any of it!

    1. You should make a quiche or frittata! Then maybe some baked ziti with it.

  3. When I was a kid, canned spinach was one of my most favorite foods! Spinach is still one of my favorites, but not so much the canned variety!
