Autumn = Zucchini Bread


When Zucchini is abundant, I always shred it and freeze in 1 1/2 cup portions.  This makes it super easy when I want to whip up some zucchini bread later on.





My favorite zucchini breads to make are chocolate chip (which is featured here) or lemon zest.  This is perfectly acceptable to eat for breakfast...and I do.

    1. you must give it a go...and it makes you feel good when your kids want a second helping, even if it does contain chocolate.
