Opposites Attract



As much as I am drawn to simple, one pot meals my husband love tedious, challenging cooking.  

Exhibit A:  This is pork belly, slow roasted for hours in the oven served with couscous. And that bottom piece of food art? Well, that is a vegetable terrine.  Its layered with fried apple slices, a mixture of potato, parsnip, and ricotta mash, roasted carrots with a maple glaze, puree of spinach and kale and topped with steamed asparagus and caramelized pearl onions. 

Each layer has to be made, then layered, then refrigerated so it can be sliced for serving.  The result is an amazing vegetable medley, but seriously?



I'm not complaining mind you. I love the meals that are placed before me for dinner. I feel like the luckiest girl sometimes.

  2. My husband used to cook in restaurants but he's not formally trained. He's been a tattoo artist for 15 years now. He is an artist and food is one of his mediums. Maybe when we are older we will open up a small restaurant. It's a lot of work running one though and we like our free time! :) For now, we just bless our family and friends with amazing meals.

    1. I'm so glad because I like cooking occasionally, but normally I'm lazy about food if I'm not fed. ha ha

  4. yum, that looks amazing. I love to create elaborate meals occasionally, but when time is short I'm much more likely to throw together a pan of pasta sauce, a get a pot of soup bubbling away. baking is what I really make time for.....
